Chocolate Peanut Butter Cookie Recipe

Posted by - Categoriezed under: Choco Cookies

I have always loved the combination of chocolate and peanut butter. I used to love the commercials of the kids running into each other, one child with the Hershey chocolate bar, and the other child with a jar of peanut butter.

The first time I tried these cookies, I was hooked. The recipe is a very simple peanut butter dough, with a Hershey’s kiss in the middle:

1 cup butter2/3 cup creamy peanut butter1 cup white sugar1 cup brown sugar2 eggs2 teaspoons vanilla2 2/3 cups flour2 teaspoon baking soda1 teaspoon salt

Additional sugar in a bowl for rollingChocolate Kisses

Combine butter, peanut butter and sugars; blend until creamy. Add eggs and vanilla; blend. Mix flour, salt and soda, add to cream mixture; stir well. Roll dough into quarter size balls. Roll ball in bowl of sugar. Bake dough at 350 degrees for 8 minutes. Immediately place chocolate kiss in center of each cookie. Bake an additional 2 minutes. Transfer to cooling rack.

You can add food coloring to the dough to create any color you’d like. We have made these cookies in red, green and blue. You can also divide the batter and make multiple colors for one batch of cookies.

Experiment with the many flavors of Hershey’s kisses. They make a kiss that has peanut butter right in the middle. These are a wonderful addition to the peanut butter cookie. Hershey’s also makes kisses with nuts in the middle. This is a fun kiss to put in the middle of the cookies. If you make a red dough, try the chocolate kisses that are part white and part brown.

We have also added peanut M&M’s in the middle, instead of Hershey’s Kisses. Follow the same recipe adding the M&M’s at the very end and baking 2 additional minutes.

If you find the cookies a little sweet for your taste, cut out some of the brown sugar. Try cutting the brown sugar down to 3/4 of a cup.

The history of the fortune cookie dates back to the 13th and 14th century, when secret messages were placed inside of moon cakes to coordinate an uprising against the Mongols, who were known to have no interest in lotus paste. In the mid 1900′s, Chinese railroad workers exchanged happy messages in biscuits instead of cakes for their moon festivals. The first automated fortune cookie factory was started in 1964.

Seasonal Cookie Wedding Favors

Posted by - Categoriezed under: Choco Cookies

Cookies are a very popular choice for wedding favors, possibly due to the fact that they are easily customized to suit any wedding, can be produced in large quantities fairly cheaply and edible wedding favors are always a hit with the guests!

Purchasing custom made cookie favors which are iced to your requirements could cost you as much as $8 each, but cookies are so easy to make at home and icing them is really not all that hard!

Here are some ideas for cookie shapes for seasonal weddings which you could use for your favors:

Spring:

Summer:

Fall

Winter

Mostly favor cookies will be plain vanilla flavored cookies, but you could make flavored cookies according to the season of your wedding or to whatever flavor takes your fancy! For instance, chocolate, orange, lemon, cherry biscuits, ginger, cinnamon or treacle are just a few flavors you could experiment with. Winter cookies would be lovely made from gingerbread or flavored with a hint of cinnamon, which would make them smell festive and invoke seasonal cheer in your guests! Whilst chocolate cookies are favorite all year round!

Try baking some at home and adding in different flavors to find which works best. You can then use these to practice your icing skills on, that is if you haven’t eaten them first!

When it comes to icing you can use roll out fondant icing to great effect and only need to use your cookie cutter to cut the fondant to the same shape as your cookies. You can then use pipe icing to highlight any details or to add words, such as your names, your guest’s names (if you use them as place cards as well) or simply ‘thank you’. Cake making supply shops have a range of templates available which can make this very easy.

To wrap your cookies I would use simple plain cellophane bags tied with ribbon at the top. These bags allow your handiwork to be shown off to best effect, whilst protecting the goods inside, they are also very cheap! Be careful not to make your cookies too early either as they may be stale by the time the wedding comes around. Many cake making suppliers sell cookie mixes which can have a long shelf life when baked, but you may want to test them first to see if you like the end result!

And, if you didn’t want to ice cookies then making simple round cookies will do just as nicely! Why not make batches with a range of flavors that accompany the season of your wedding. You could make mini cookies and give your guests a selection of flavors inside a goodie bag. Or alternatively you could create sandwich cookies with a delicious buttercream flavoring inside.
