How to Make Ultra Chewy Chia Chocolate Chip Cookies
Posted by - Categoriezed under: Choco CookiesThe chocolate chip cookie is an American classic. It’s the favorite cookie of many people, and the New York Times even produced an article about them which is still getting ‘buzz’. It’s no surprise that this cookie is such a big favorite, it’s very down-to-earth, and is often a comfort food. It’s also easy to make at home, if you don’t try to get overly exotic with it.
Chocolate chip cookies come in two basic textures, chewy and crispy. This recipe is for the chewiest, most melt-in-your-mouth delicious chocolate chippers you’ve had. If you like crispy cookies, stay far away because these bake up puffy, light and never oily. The soft moist cookies are full of big gooey chocolate chips. They taste fantastic hot from the oven, and keep well in sealed containers. However, because they are moist and rich-tasting with no preservatives, they should be refrigerated after a few days to prevent mold. (Much like a bakery-fresh moist bread, these cookies need care to not go stale)
Extra fact:Most cookie recipes only make cookies of ONE size. If you attempt to make the cookies at a size that is not described in the original recipe, you’ll run into problems such as undercooking while edges burn, or over-done cookies despite the bake-time. These cookies can easily be made in ANY of THREE sizes!
From ¼ cup scoops of dough at once for giant cookies…to1.5 tablespoon sized medium cookies…and1 .5 teaspoon size regular cookies
With this recipe the size is totally up to you! Just adjust the baking time accordingly. (seen below) A big chocolate chip cookie can make a nice ‘thank you’ gift for someone you know. When it’s home made, it really shows you care…and you only need to spend minutes making them!
How could a chocolate chip cookie get even better? What if it had HALF the fat of an ordinary cookie? What if it tasted richer and chewier than an ordinary cookie? And what if it had fiber, and healthy nutrients as well?

Make Chia Gel (a video)
Chia gel is super easy to make, and it’s the key to the healthy kick these cookies pack. Due to its unique gelling property, it replaces half of the butter in this recipe, without changing the flavor. Chia seeds have no flavor of their own when you make the gel with filtered water. You won’t even know they’re in the cookies.
1 tbsp dry chia seeds9 tbsp filtered water
In a seal-able container, simply scoop in the chia seeds and add the 9 tbsp filtered water. Stir with a fork to prevent clumping, and let stand for about 10 to 15 minutes. The seeds will each have formed a thick gel around them. This gel can now be used to replace up to half the butter or oil in almost any baked recipe.

The chances of feeling guilty after eating those lovely bars of chocolate are quite high.
We all know how difficult it is to find great quality chocolate that is not only low in fat and sugar, but low in carbs and made with natural sweetener. I happened to find a place where none of the chocolate contains maltitol and is truly delicious and nutritious to boot. They use Erythritol and not maltitol, the chocolate will not cause you any stomach distress as it is easily digestible, sweet and so tasty.
Erythritol is a sugar alcohol that is from naturally derived sources, it looks and tastes just like normal sugar, but it is much better for your overall health and weight. It is a sugar alcohol that is made from plants or starches. It can be found in grapes, in mushrooms, in cheese, wine, beer and many more sources. It doesn’t upset digestive systems and is gentle on your body. Erythritol contains almost zero sugar and helps assist a healthy and low calorie diet.
The place I’m talking about is cocoawishes. Their chocolate is so appetizing, just looking at the pictures will make your mouth water. They ensure you will be satisfied with our chocolate as it is made with love and care. You can have any of these melting in your mouth in both milk chocolate and dark chocolate.
So even if you love chocolate and can’t bear to give it up while you are on a diet or looking to eat healthier, theirs an answer to your problems. If you love chocolate the way they do, do check out their specials. Enjoy this amazing and succulent chocolate without any of the guilt or despair afterwards.

I have always loved the combination of chocolate and peanut butter. I used to love the commercials of the kids running into each other, one child with the Hershey chocolate bar, and the other child with a jar of peanut butter.
The first time I tried these cookies, I was hooked. The recipe is a very simple peanut butter dough, with a Hershey’s kiss in the middle:
1 cup butter2/3 cup creamy peanut butter1 cup white sugar1 cup brown sugar2 eggs2 teaspoons vanilla2 2/3 cups flour2 teaspoon baking soda1 teaspoon salt
Additional sugar in a bowl for rollingChocolate Kisses
Combine butter, peanut butter and sugars; blend until creamy. Add eggs and vanilla; blend. Mix flour, salt and soda, add to cream mixture; stir well. Roll dough into quarter size balls. Roll ball in bowl of sugar. Bake dough at 350 degrees for 8 minutes. Immediately place chocolate kiss in center of each cookie. Bake an additional 2 minutes. Transfer to cooling rack.
You can add food coloring to the dough to create any color you’d like. We have made these cookies in red, green and blue. You can also divide the batter and make multiple colors for one batch of cookies.
Experiment with the many flavors of Hershey’s kisses. They make a kiss that has peanut butter right in the middle. These are a wonderful addition to the peanut butter cookie. Hershey’s also makes kisses with nuts in the middle. This is a fun kiss to put in the middle of the cookies. If you make a red dough, try the chocolate kisses that are part white and part brown.
We have also added peanut M&M’s in the middle, instead of Hershey’s Kisses. Follow the same recipe adding the M&M’s at the very end and baking 2 additional minutes.
If you find the cookies a little sweet for your taste, cut out some of the brown sugar. Try cutting the brown sugar down to 3/4 of a cup.
