DEVIL’S FOOD CAKE – COUNTRY LIVING HOLIDAYS

Ingredients

1/4 c. Butter or margarine, softened

1 1/2 c. Sugar

1/4 Tsp. Salt

1 Tbs. Vanilla

3/4 c. Unsweetened cocoa

3 1/2 c. Unsifted cake flour

2 Tsp. Baking soda

2 1/2 c. Water

4 Egg whites, at room temp.

Cocoa frosting

Chocolate glaze

Confectioners’ sugar and -unsweetened cocoa (opt. for checkerboard decoration)

Directions

1. Heat oven to 350′F. Generously grease and flour three 9-inch round

cake pans.

2. In a large bowl with electric beater or mixer, beat butter, 3/4 C

sugar, salt, and vanilla together until fluffy.

3. Combine cocoa, flour, and soda in a sifter. Sift into bowl on top

of butter mixture. Add water and beat at low speed just until smooth.

4. With clean beaters in a medium bowl, beat egg whites until fluffy.

Gradually add remaining 3/4 C sugar. Continue beating until stiff peaks form. Fold, one-third at a time, into chocolate batter.

5. Divide batter evenly into prepared pans. Bake until centers spring

back when touched-20 to 25 minutes.

6. Cool 5 minutes in pans. Turn out on cooling rack and cool

completely.

7. Prepare cocoa frosting. Fill and assemble cake. Spread a thin

smooth layer of frosting over cake. Refrigerate 1 hour.

8. Prepare chocolate glaze. Place chilled cake on a cooling rack with

a tray underneath it. Spoon glaze onto top of cake. Spread evenly allowing glaze to flow down sides. Smooth sides.

9. Place cake, still on cooling rack with tray, in refrigerator until

glaze is firm.

10. Decorate top with cocoa and confectioners’ sugar checkerboard just

before serving, if desired. Place 1-inch strips of thin cardboard gently onto frosting 1-inch apart. Sift unsweetened cocoa over top of cake to solidly fill spaces. Carefully remove and clean strips. Place gently in opposite direction. Sift confectioners’ sugar over cake. Remove strips.

Cocoa Frosting: In a medium bowl, beat together 1/3 C softened butter or margarine, 1 1/2 lb. confectioners’ sugar, 1/3 C unsweetened cocoa, 1 Tsp. ground cinnamon, 3/4 Tsp. vanilla and 1/3 to 1/2 C milk. Use to fill and frost cake.

Chocolate Glaze: In the top of a double boiler, over hot (not boiling) water, melt 6 1-oz squares semisweet chocolate and 4 Tbs. butter. CRANBERRY AND WHITE CHOCOLATE CHEESECAKE

Ingredients

CAKE 4 oz. White chocolate, chopped

2 pkg. 8-oz cream cheese

3/4 c. Sugar

3 Eggs

2 Tsp. Vanilla

pinch Salt

3 c. Sour cream

CRUST: 1 c. Graham cracker crumbs

2 Tbs. Butter, melted

2 oz. White chocolate, chopped

GLAZE: 2 c. Cranberries

1/3 c. Sugar

1 Tsp. Cornstarch

Grated white chocolate for Garnish if desired

Directions

Recipe for Crust: Stir crumbs with butter until well moistened; stir in chocolate. Press into the bottom of a greased 9-inch spring form pan. Centre pan on a 20 X 14 inch piece of foil; press up tightly around side of pan. Bake in 325F oven for 8 minutes. Let cool on a rack.

Recipe for Cake: In a double boiler melt chocolate. Let cool. In a large bowl, beat cream cheese until softened. Gradually beat in sugar; beat for 3 minutes or until fluffy. On low speed, beat in eggs, one at a time, beating well after each addition. Stir in vanilla, chocolate and salt; stir in sour cream. Pour onto crust. Set cake pan onto a larger shallow pan; pour in enough hot water to come 1, inch up the side. Bake at 325F for 1 1/4 hours or until the edge is set but centre still jiggles slightly. Turn oven off; let cool in oven for 1 hour. Remove from larger pan and remove foil; let cool on a rack. Cover and refrigerate over night.

Recipe for Glaze: In saucepan cook cranberries and 1/4 cup water, partially covered, just until boiling. Stir in sugar and return to a boil; cook for 2 minutes or until sugar is dissolved but berries have not popped. Drain, reserving juice and berries separately. Remove cake from pan; place on cake plate. Return juice to saucepan; blend in cornstarch. Cook, whisking, until boiling and thickened; let cool slightly. Spoon berries around edge of the cake. Spoon glaze over top. Refrigerate for 1 hour or until set. Garnish with chocolate gratings. Canadian Living, December 1993.

Chocolate-cherry Heart Cake Made With Rum

The secret ingredient of this Chocolate-Cherry Heart Cake is rum. This ingredient makes this chocolate cake stand out from all the rest.

CHOCOLATE-CHERRY HEART CAKE

DARK CHOCOLATE ICING: 12 oz semisweet chocolate, chopped finely 6 tbsp unsalted butter, cut into pieces 1 cup heavy cream 3 tbsp rum (or use 1 tsp rum flavoring) 1 cup cherry preserves 1 semi-sweet (4 oz) chocolate bar

Place 12-ounce chocolate and butter in a large bowl. In a small saucepan, bring cream to a boil over medium heat, stirring occasionally. Pour cream over the chocolate and butter and shake the bowl gently to distribute the cream evenly. Let sit for 2 to 3 minutes. Whisk together by hand until smooth. Cover the surface of the icing with plastic wrap and set aside in a cool spot to set but do not refrigerate. When set, the icing should have the consistency of a firm pudding. Set aside the preserves until the cake is to be assembled.

With a vegetable peeler, shave the chocolate bar into a freezable bowl. Place in the freezer until ready to decorate the cake.

DARK CHOCOLATE CAKE: 1 stick unsalted butter, softened 3/4 cup granulated sugar 1/2 cup light brown sugar, packed 2 large eggs 1 1/2 cups all-purpose flour 1 tsp baking soda 1/2 tsp baking powder 1/4 tsp salt 1/2 cup cocoa powder 1/2 cup sour cream 1/4 cup rum 3/4 cup boiling water

Preheat oven to 350 degrees. Butter and line with parchment paper the bottom of single layer heart-shaped pan. Set aside.

In the bowl of an electric mixer cream butter, granulated sugar, and brown sugar together until light and fluffy. Add eggs, one at a time, blending until smooth after each.

Sift together the flour, baking soda, baking powder, salt, and cocoa. In a separate small bowl, blend together the sour cream and rum. With mixer on low, alternately add the dry ingredients and the rum mixture, beginning and ending with the dry ingredients. Slowly pour in the water and mix until well-blended. Pour the batter into the pan and shake gently to level. Bake 30 to 40 minutes, until center of cake springs back when lightly touched. Remove from the oven and let cool for 5 to 6 minutes in the pan then invert onto a wire rack to cool completely.

To Assemble: When the cake is completely cool, invert cakes onto a serving plate. Using a hand held whisk, stir the cooled chocolate icing, adding the rum gradually. Once rum is incorporated, whisk vigorously for a few seconds until the icing is slightly lighter in color. Spread 2/3 of the icing over the sides and top of the cake. Take chocolate shaving from the freezer and adhere shaving to the sides of the cake. Spread the cherry preserves gently over the top of the cake in a heart shape design, leaving at least a 1-inch border around the edges. Use the remaining icing to make a decorative design around the cherry heart and around the top edge of the cake.

The Best Most Moist Chocolate Cake Recipe in the World!

My mother has been making this cake for years, and it is hands down the most delicious moist chocolaty-cake you’ll ever have. She says the secret ingredients are the pudding mix and the sour cream – so don’t scrimp on those! Enjoy!

1 (18 1/2 ounce) box Duncan Hines moist deluxe devil’s food cake mix

3 1/2 oz instant chocolate pudding mix

1/2 cup chocolate chips

4 eggs

3/4 cup vegetable oil

1 1/2 cups sour cream

3/4 cup Kahlua

4 tablespoons powdered sugar

3/4 cup chopped walnuts, divided

Preheat oven to 350 degrees.

Grease or Butter Bundt Pan

Mix all ingredients well in a large bowl.

Pour into a greased, 12-cup bundt pan Add 12 walnuts to top of cake and bake until a toothpick inserted in the middle comes out with crumbs clinging to it – about 45 minutes.

Cool in pan and serve on a platter with powdered sugar lightly sifted over the top. YUMMY!

The most famous name in chocolate cakes is the German Chocolate Cake, but the interesting fact is that it was not `German’ at all. It merely used chocolate brand which was called `German’s’ because it had been developed by an Englishman named Sam German in 1852! He was working for Baker’s Chocolate Company. The recipe for this chocolate cake was first made popular by a Dallas housewife in 1957, and probably due to the fact that German baking is one of the best in the world, the name not only stuck, but also lent the cake its squarely German touch. The result was an instantly popular cake which carried up the sales of the chocolate too. Actually the popularity of the cake can be attributed to the fact that in The Southern US, buttermilk chocolate cakes have been a hit for decades, and the fact that German’s chocolate is sweater than regular baking chocolate, also helped. Coconuts and pecans which are available in the area too, only added to the taste. In classical terms, the most famous chocolate cake of all times, worldwide, is the Sachertorte, the Viennese chocolate cake with its three layers of luscious chocolate sponge, interspersed with layers of apricot jam. The whole cake is then thickly iced with velvety chocolate. The result was probably why chocolate is synonymous with sinful! Grease two cake tins of 7 inch diameter. Melt the chocolate in a bowl set over a deep pan of boiling water. Cream together butter and sugar and add the eggs one at a time, beating well. Add the melted chocolate and beat till well combined. Sift the flour and cocoa powder together and fold into the chocolate-egg-sugar-butter mix. Don’t beat too much. After the mixture is blended well, pour into the baking tin . Bake for about 45 minutes, or till well risen. For the sandwich icing : 100 grams unsalted butter 1 and a ½ cup icing sugar 1 tbsp cocoa powder ½ tsp vanilla essence Beat together all these ingredients to form a light chocolate cream. You can have your guests wondering who your baker is!  If you want to impress your guests at your next dinner party, bring out this wonderful Alaskan Molton Chocolate Cakes for dessert!  This recipe makes 16 little cakes so it is perfect for a crowd or dinner party.  Your guests will be impressed!

ALASKAN MOLTEN CHOCOLATE CAKES

2 tbsp butter, melted2 tbsp unsweetened cocoa3/4 cup butter, cut into pieces3 (4-oz each) premium semisweet chocolate baking bars, broken into chunks*1/2 cup whipping cream1 1/4 cups egg substitute**3/4 cup sugar2/3 cup all-purpose flourpowdered sugar for dusting

Brush 16 muffin cups with the 2 tablespoons of melted butter; sprinkle evenly with the unsweetened cocoa, shaking out the excess. Set into the refrigerator.

In a large heavy saucepan, place the cut-up butter and the chocolate chunks. Cook over low heat, stirring often, until all melted. Slowly whisk in the cream using a wire whisk; set aside.

Combine the egg substitute and sugar in a large mixing bowl. Beat with an electric mixer at medium speed for 5 to 7 minutes or until slightly thickened. Add the chocolate cream and the flour, beating until well blended. Pour the batter into the prepared muffin cups filling each to about 1/4-inch from the top. Cover and return to the refrigerator for at least one hour (okay to do up to 24-hours).

Remove from refrigerator and bake in a preheated 425 degree oven for 10 to 11 minutes or just until the edges of the cakes spring back when lightly touched but the centers are still soft. Remove from oven and let stand 3 minutes . Loosen cake edges with a thin knife and invert cakes onto a baking sheet. Transfer cakes to dessert plates. Sprinkle with powdered sugar and serve immediately.

*Do NOT substitute chocolate baking chips!!**Do NOT use regular eggs as they will not cook thoroughly!!
